Coconut Macaroons

In the spirit of summer fun at the beach, I have been experimenting with desserts and came up with this delicious and tempting recipe for coconut macaroons.

It is simply four ingredients:
1 can sweetened condensed milk
1 8 oz. pkg. organic unsweetened coconut
1/2 cup dark chocolate or semi-sweet chocolate morsels
1 tsp vanilla


Mix all ingredients together in a bowl until all of the coconut is coated with the condensed milk.
(You can add chopped almonds for an almond joy coconut macaroon)


Spoon a dollop of the mixture onto a baking sheet lined with parchment paper and sprayed with cooking spray.




Bake at 350 degrees for 12 minutes or until the edges are beginning to turn golden brown and caramelized.  Yum!!


Cool and enjoy!

  2. Would these work for breakfast? ;) Because they sure do look good right now!! I'll be trying them soon, so easy!

    1. Jennifer, they would be delicious with a cup of hot tea for breakfast. If you want them less gooey, just add a half of a cup of flour and they would be a bit drier like a scone.
